Fresh New Zealand inspired salad!

I am currently in New Zealand, staying in Mt Bruce to be more specific, at an art residency. Its beautiful here and everything seems to inspire me! Here is a recipe for tofu broccoli salad with greens, spiced seeds and goats cheese...


I marinated chunks of tofu with freshly collected herb from the garden as well as a drop of soy sauce, fish sauce, olive oil, one lemon, spices and salt/pepper. This was refridgerated overnight and then fried the next day.

With excess juices I then fried one broccoli with about four garlic cloves. Once finished I then added the tofu.

All that I did was fried the sunflower seeds and pepitas on the frying pan. Then when ready I added olive oil and lots of spices and mixed it together.
